Flavors and style

Aromas of lychee, papaya, rose petals, and melon. On the palate, juicy, creamy, and mineral—with subtle spice and the eponymous umami sensation. Expressive and grippy at 12.5% alcohol.

Terroir and cellar work

2021 from Gewürztraminer and Roter Traminer, harvested in biodynamically managed vineyards near Velké Bílovice (loess, sand, and clay soils). The grapes were crushed by foot and macerated for four days, then spontaneously fermented and aged for almost three years in used 3000-liter Stockinger barrels. Unfiltered, unfined, with minimal sulfur (~5 ppm).

Fits

Ideal with fermented dishes, mushroom dishes, Asian cuisine with miso or soy sauce, but also with strong soft cheeses or on its own as a food-for-thought wine.
